Flax eggs are an easy vegan eggs substitute ideal for vegan and eggless baking recipe. They are simply made by mixing 1 tbsp ground flaxseed with 3 tbsp of water and can be used as a 1:1 egg substitute in most baking recipes.
What is a Flax Egg?
1 Flax Egg = 1 tbsp flaxseed powder + 3 tbsps of water
It really is that simple! My respects go down to the first person who must have tried it. What must have been the thought behind ? “Hmm… let’s see. How about I try to use flaxseeds in place of eggs for eggless baking?” I’m sure it must have an accidental origin where the lady (or the man) forgot a mixture of ground flaxseed and water only to realize that it thickens up and becomes gelatinous like an egg!
Flaxseeds are rice in fiber and omega 3 but to absorb their minerals, they have to be eaten ground! Whole flaxseed will provide fiber but will pass through your system as is. To get the omega-3 and other mineral benefits of flaxseeds, ground them and then add them to your smoothies, oatmeal, and bakes!
Last weekend I made these eggless cookies using flax eggs and they came out perfect! Till now I usually used a combination of yogurt, baking soda, and baking powder for eggless baking but I wanted something vegan and last year I saw and read about so many bloggers using flax eggs. I was curious and I tried and it absolutely works. Like a charm, if I may say :-).
And it doesn’t even take that long for it to thicken. Just about 10 minutes while you gather every thing else that you need for baking your favorite cookie, brownie, muffin, pancake, or cake!
How to make Flax Eggs
Ingredients (1cup = 240ml; 1tbsp = 15ml; 1tsp = 5ml)
- 1 tbsp flaxseed ground
- 3 tbsp water
- Stir 1 tbsp ground flaxseed with 3 tbsp water in a small glass or bowl.
- Set aside for 10 minutes till it thickens and becomes gelatinous like liquid raw egg.
- Use in your baking recipe as a 1:1 substitute for eggs.
- If you are allergic to flaxseeds (I know some people are!) you can also use ground chia seeds to make chia eggs instead of flax eggs as an egg replacement for eggless and vegan baking.

Can Flax Egg be used as an Egg Replacer in every recipe?
I wish. But I know you know the answer!
Flaxseed eggs work very well in baking recipes like cookies, cakes, brownies, muffins, and pancakes.
But Flax eggs won’t fry or set like real eggs to make omelets or french toast or scrambled eggs or frittata. There are other vegan egg substitutes for those dishes like chickpea flour can be used to make vegan omelets and frittata. Tofu or grated cauliflower can be used to make vegan breakfast scramble.
