This recipe is straight from the newspaper. Since a few days the magazine section of Hindustan times has been featuring Sanjeev Kapoor. I don’t think it’s a coincidence that he has just launched his food channel and is soon to launch another cookbook! Publicity works…
Anyway so this Saturday the section had quite a few recipes by him and the smallest of them was Gajar ka halwa. Gajar halwa is one of the most popular deserts especially in North India and this time of the year being the season for gajar, nice red and sweet gajar is available in the market. So when I read the recipe, I decided to try it and as it happens everyone liked it! I don’t take any credit for this one.. just stick to the master chef’s recipe.. (I just added a few raisins in addition to cashew nuts and dates!)
Gajar aur Khajoor ka Halwa
Preparation Time: 10-15 mins | Cooking Time: 30 mins | Serves: 4
Carrots, grated 10 medium
Dates, seeded and chopped 3/4 cup
Sugar 1/2 cup
Milk 2 cups
Cashew nuts, roughly chopped 8-10
Green cardamom powder 1 tsp
Ghee 2 tablespoons
- Heat a kadai.
- Add grated carrots and sugar and cook for about five minutes. Add milk and continue to cook.
- Add dates, cashew nuts, raisins, green cardamom powder and mix.
- Cook for ten to fifteen minutes.
- When dry and cooked add ghee. Mix well. Cook for another 2 minutes.
- Serve hot.
