This simple Mediterranean parsley salad recipe celebrates the joys of homegrown herbs and fresh ingredients. With freshly harvested parsley, onions, and lemons – it bursts with fresh flavours and textures.
…harvested just a few hours before!
I had taken a few friends to the farm and was showing them different herbs growing. My friend’s daughter plucked a bunch of cherry tomatoes from the vine and we had plucked some parsley to taste on our tour. The kids were also very interested in digging up some onions because they couldn’t see how the green shoots had an onion below them.
When we came back and saw we had some parsley, tomatoes, spring onions and a lemon, I said, “Let’s make a salad using all of these!”. And that’s how we came about our farm recipe for this Mediterranean-inspired parsley salad. It is incredibly simple and very flavorful.
We have a beautiful wood cutting board on the farm but more than its aesthetics, it is ideal and safe to use with children and adults. Plastic cutting boards are not generally good- they scratch easily and then become hotbeds for bacteria, and tiny bits of plastic can get into food while cutting. Glass is not safe with children.
Mediterranean Parsley Salad
Ingredients (1cup = 240ml; 1tbsp = 15ml; 1tsp = 5ml)
- 50 gms curly parsley leaves stems removed
- 1 cup cucumber chopped
- 1 cup tomato chopped
- ½ cup green onion sliced
Dressing
- ¼ cup olive oil
- 1 lemon juiced
- 1 tsp lemon zest
- 1 tsp mustard sauce
- Salt to taste
- Black pepper to taste
- 2 cloves garlic
Instructions
- Wash and cut all salad ingredients, then transfer to a large mixing bowl.
- Whisk together all dressing ingredients in a small jar.
- Drizzle the salad dressings all over the salad then gently toss together and it’s ready to serve.
