Hare Tamatar ki Sabzi (Green Tomato Curry)
Sweet, tangy and spicy, this green tomato Indian curry pairs well with roti and rice. It can also be served as an instant pickle on the side.

Ingredients

green tomatoes

tbsp
vegetable oil
a pinch of hing

cumin seeds

tsp
fenugreek seeds

green chillies
finely chopped

coriander powder

tsp
turmeric powder

tsp
red chilli powder
Salt
to taste

jaggery
Fresh coriander for garnish
Instructions
Wash and chop the tomatoes into ½” cubes
Heat oil in a pan on medium heat. Once hot, add hing, cumin and fenugreek seeds.
When the seeds crackle, add ginger, garlic and green chillies. Sauté for 30 seconds.
Add the chopped tomatoes and all the spices.
Mix well, reduce heat to low and cook covered for ~10 minutes till the tomatoes turn soft.
Add jaggery and coriander. Mix well and serve hot.
Notes
The green tomato sabzi can be stored in the refrigerator for 3-4 days.
