Ingredients
3tspinstant coffee powder
1cuplukewarm water
450gmsheavy creamuse vegan options
4tbspcastor sugar
1tspvanilla extract
250gMarie biscuit1 regular pack
1cupchopped walnuts
Instructions
Mix instant coffee powder in 1 cup lukewarm water and keep aside.
In a big mixing bowl, beat together the cream, sugar and vanilla extract.
One by one, dip Marie biscuit in coffee and place them in a layer at the base of a glass dish (I used an 6x6 glass dish)
Lightly pour the coffee on this layer with a spoon.
Now add a thin layer of beaten cream on top.
Sprinkle a layer of chopped walnuts on top of the cream.
Now repeat the layers one more time — biscuits dipped in coffee, cream and then chopped walnuts.
Cover the dish with cling film and refrigerate for 4-5 hrs
Scoop out and serve individual portions. You can also set the pudding in individual ramekins. If you have glass ones where you can see the layers, it will be a delight for the eyes!
Notes
To Store: Cover with long film and keep refrigerated. Stays well for unto 2 days. It become soggy and runny when left out so take it out of the fridge just before serving.
